Beef Short Ribs

Ingredients:
6 Short Ribs
1-2 carrots/parsnips
2 stalks celery
1 onion
1 tbsp tomato paste
100ml or so red wine
300ml beef stock (enough to cover short ribs)
1 tsp miso paste (don't skip!!)
2 garlic cloves
fresh thyme, bay leaf
square of dark chocolate (DON'T SKIP!)
salt, pepper
mashed potatoes :)
chives for cutesy
Directions:
1. Pat short ribs dry, salt generously and option to dry-brine overnight in the fridge (I didn't, and they were fine!)
2. Add a tiny bit of oil to your Dutch oven or large pot, over high heat, and get a nice color on each side of each rib. I had to do 2 batches of 3 ribs to not overcrowd the pan.
3. Take ribs out, and add in chunks carrot/parsnips and sliced onion. Season salt and pepper as you go. Add in tbsp of tomato paste and red wine to deglaze and cook off for a few minutes.
4. Add in miso, chocolate, herbs, and stock.
5. Simmer or stick in the oven at 150 degrees Celsius (300F) for about 4 hours, or a slow cooker on low 6-8 hours works well, too.
