Chickpea Cucumber Salad

1 whole cucumber
cherry tomatoes
1/2 red onion
1 can garbanzo beans (chickpeas), drained and rinsed
feta cheese crumbles
1/2 lemon (to squeeze over, OR use a balsamic vin!)
salt & pepper to taste

Chop your cucumber, tomatoes, and onion to bite-size pieces. Squeeze lemon juice over, or a light balsamic vinaigrette dressing and toss together. Top with feta cheese crumbles!
