Sloppy Joe (over sweet potato)
MAKE THIS RECIPE:
Brown 1lb ground beef (or bison/turkey/chicken) in large skillet. Add in 1/2 chopped onion and minced garlic (to preference) until fragrant.
Add in 1/2 cup ketchup, 2 tbsp barbeque sauce, 1 tbsp Worcestershire sauce, 1/4 cup brown sugar.
Optional to add red pepper flakes, paprika for added heat and smokiness. Season with salt & pepper to taste.
Roast sweet potato in 400 degree oven. Poke potato with a fork to let steam escape, cover in olive/avocado oil, wrap in foil, and roast for 40-60 minutes until soft.
Top with sloppy joe mixture and mozzarella cheese.

Roasted Honey-Glazed Carrots
Wash carrots (optional to peel, I leave the skins on).
Drizzle with olive oil, honey (or maple syrup), and sprinkle with cinnamon, paprika, salt, and pepper.
Roast carrots in 400 degree oven for 25-45 minutes until soft enough to poke with a fork.
