Apple-Sausage Acorn Squash
MAKE THIS RECIPE:
1 acorn squash
olive oil (honey or maple syrup work well too)
1/2 - whole apple (green, or any type!)
1/2 yellow onion
2-3 garlic cloves
2-3 tbsp brown sugar
paprika, cayenne, salt & pepper to taste (can also add: red pepper flakes, oregano, rosemary, etc.)
1-2 (fully cooked) apple sausage (or any type of sausage!)
shredded cheese of choice
bread crumbs
1 acorn squash

paprika, cayenne, salt & pepper to taste (can also add: red pepper flakes, oregano, rosemary, etc.)
1-2 (fully cooked) apple sausage (or any type of sausage!)
shredded cheese of choice
bread crumbs
Preheat oven to 350.
Cut squash in half (through stem) and scoop out seeds.
Poke squash with fork and drizzle lightly with olive oil and/or honey or maple syrup
Roast 30-45 minutes until soft.
Let cool a bit before carefully scraping out squash (to create a little "bowl").
In a large saute pan, add oil (or butter) and saute onions for a few minutes.
Add brown sugar, spices, cooked sausage, chopped apple, garlic, and the inside of the cooked squash.
Cook and mix together for a few minutes.
Add mixture back into squash, top with cheese and breadcrumbs.
Bake 10-15 minutes until cheese is melted and lightly golden.
